It has been a while but I have decided to deticate more time FOR REAL to my little blog! Today I will share with you my two favorite recipes for Thanksgiving that I have been making every year for about 6 years now. One is an appetizer dip and the other: PUMPKIN PIE of course! This pie has a twist though and you wont guess what it is! Both recipes come from allrecipes.com and I do not claim them as my own original concotions. So thanks allrecipes. Lets get started!
Appetizer: Tuscan Cream Cheese Spread
Ingredients:
2 (8oz packages) cream cheese softened
2 teaspoons chopped garlic
1 teaspoon salt
1 (14oz) can artichoke hearts, drained
1/3 cup chopped black olives
8 green onions, chopped
3 ounces sun-dried tomatoes
1/4 cup chopped parsley
1 tablespoon chopped fresh chives
Directions:
1. In a medium bowl, mix cream cheese, garlic and salt, stir. Blend in the artichokes and olives.
2. Add green onions, tomatoes, parsley and chives. Mix together gently.
3. Refrigerate for several hours or over night. (I like over night best)
Cindy's Pumpkin Pie
Ingredients:
1 1/2 or 2.5 cups pint of vanilla ice cream (I like Dryers slow churned vanilla bean). YES this is the twist!
3 eggs
1 3/4 cup pumpkin puree
3/4 cup of white sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 reaspoon ground nutmeg (I like 1/2 teaspoon for added aroma and spice)
2 (9 inch) unbaked pie shells
Directions:
1. Preheat oven to 425 degrees F or 220 degrees C and place ice cream near warm oven to soften (I let mine melt to liquid)
2. In a large bowl, whisk together eggs. Stir in pumpkin puree, sugar, salt, cinnamon, ginger and nutmeg. Mix in ice cream until smooth (This is why I let it melt to a liquid becasue the ice cream is cold and wont mix if softened. I havent noticed a difference in texture of the pie when melting it vs softening it).
3. Pour into the two pie shells and place on a baking sheet.
4. Bake for 15 min (ovens may very) in preheated oven. Reduce heat to 350 degrees F or 175 degrees C and bake for an additional 30 to 40 min.
Voila! A yummy pie with an interesting ingredient that could be a great conversation starter!
Beauty Bites:
-Even though Thanksgiving is two days away I have all my Christmas decorations up with the exception of my fake Christmas tree who is promptly named Winston. He will go up on Black Friday.
-I have decided I want to be a third grade teacher which will hopefully lead to becoming a principal and I still want to pursue opening a candle company on etsy. Yes, we can all aim to have it all. I hope to start school in June.
-I do not like the taste of cilantro and accidently ate some today.
-I love wet n wild's new holiday collection! Especially the extra sparkly nail polish in 24 karat. Only prob: it chips really quick, so no bueno! It a toe polish color only I guess.
-Lastly I am currently in love with Yankee Candle's Holiday Bayberry candle. It is a great sniff for Thanksgiving, earthy, warm, a tad spicey and just perfect for giving thanks!
